I used to think that there wasn’t anything better than Chick-fil-a’s peach milkshake in the summer, but I may have created a recipe that rivals that! This soft, fluffy, sweet and tart sourdough peach cobbler is the perfect summer treat! Not to mention, it makes your home smell impressively delicious. Learn how to make this bright and fresh cobbler, below!
Supplies Used
- A knife and cutting board: For cutting and peeling the peaches.
- Danish dough whisk: I use a danish dough whisk for stirring the batter, but you could use a spatula if you prefer.
- Measuring cups and spoons: I use these measuring cups and these measuring spoons.
- A bowl: I used a medium bowl from my glass bowl set.
- Something to stir with: You can use a wood spatula or a silicone spatula.
- Skillet: I use my 12” cast iron skillet, but you can use anything you have! If your skillet isn’t oven safe, you’ll need a baking dish as well.
Ingredients
For the Peach Filling
- Fresh peaches: See below for tips on how to pick the best peaches! You can use canned peaches in a pinch if needed.
- Salted butter
- Brown sugar
- Maple syrup
- Ground cinnamon
For the Sourdough Topping
- Sourdough starter: Make sure your sourdough starter is fed and active.
- Egg
- Milk
- Maple syrup: I use pure maple syrup but you can substitute honey if you prefer.
- Salt: I use natural sea salt
- Baking soda
Directions
Peach Filling
Wash, peel, and slice all peaches. Set aside.
Note: If you are using canned peaches, drain and rinse them, and set aside.
Preheat the oven to 350 degrees.
Melt butter over low-medium heat in your skillet. Once melted, add brown sugar, maple syrup, and cinnamon. Stir until bubbly, thick, and caramelized! This takes just a couple of minutes.
Turn the heat down to low, and add the peaches. Stir gently until all peaches are coated in sauce. Remove from heat.
Sourdough Topping
In a medium bowl, stir the egg, milk, syrup, and salt together until combined.
Add the sourdough starter, and gently stir (using a Danish dough whisk if you have one) until combined.
Add the baking soda, and gently stir to incorporate. Let rest, untouched, for two minutes. It will foam and create bubbles as the baking soda reacts with the sourdough starter!
Top the peaches with the sourdough batter. Gently swirl to your liking!
Alternatively, you could spread the sourdough batter into a buttered 9”x13” baking dish first, and then top it with the peaches in syrup. This gives you a cobbler where the peaches are on top instead of the bottom!
Bake for 20-25 minutes until the sourdough batter is cooked through. Once it’s removed from the oven, you may top it with additional peach slices if desired.
Allow to cool for 5-10 minutes before serving…if you can wait that long!
Our favorite way to enjoy this sourdough peach cobbler is with a scoop of vanilla bean ice cream on top!
Leftovers can be stored in the fridge for up to 3-4 days.
How to Pick a Good Peach
Here’s what to look for to get the most delicious peaches!
- How it feels: Ripe peaches should have a slightly firm yet slightly soft feel, meaning they should give just a little when you press your finger into them. Mushy spots mean it’s over ripe, and firm peaches aren’t ready to enjoy yet!
- How it smells: Delicious peaches will smell delicious! Typically, peaches with little to no scent will have little flavor too.
- How it looks: Great peaches are a vibrant orange or yellow color in the background! The red portions of a peach aren’t an indicator of ripeness. If they’re pale or green in the background, they aren’t ripe enough yet.
